What Is a Cream Charger Gel Dessert?

Unlike regular jelly, a cream charger gel dessert has a lighter texture with tiny bubbles, giving it a foamy, mousse-like mouth feel. It’s made by mixing juice and gelatin, then infusing it with N2O gas using a cream charger. The result? A unique, modern gel product that feels both nostalgic and futuristic.

 

Ingredients You’ll Need

Fruit juice 1 cup (250 ml)
Unflavored gelatin 1 packet (about 5 g)
Sugar (optional) 1–2 tablespoons

  • Step 1: Prepare the Base

Pour the juice into a small saucepan and heat it gently (do not boil).

Add sugar if desired and stir until dissolved.

Sprinkle in the gelatin and stir constantly until fully dissolved.

Let the mixture cool to room temperature (lukewarm is fine).

 

  • Step 2: Charge It Up

Pour the liquid into your cream dispenser using a funnel and strainer.

Secure the top of the dispenser.

Insert one N2O cartridge and charge the dispenser.

(If you only have a large cream charger at home, you'll need a pressure regulator to safely transfer the gas into your cream dispenser. Most online stores that sell cream chargers also offer compatible regulators.)

Shake the bottle vigorously for about 20-30 seconds to mix the gas evenly.

 

  • Step 3: Chill and Set 

Place the dispenser in the fridge for at least 1–2 hours.

When ready to serve, press the nozzle to release a foamy jelly.

Serve immediately for a mousse-like texture, or chill again for firmer set.

Tips & Variations

For firmer gel: Use a bit more gelatin or let it chill longer in molds.

Flavor ideas: Try mango, passionfruit, cranberry, or citrus blends.

Vegan version: Use agar-agar instead of gelatin (note: texture will vary).
